No Bake-Energy Bites! Allergy-Friendly and Healthy Treats!
I don’t know about you, but I am always looking for treats for my kids that are not only allergy-friendly but healthy as well–not to mention easy to make. Oh and of course delicious, too! I realize that having all of those qualities is a lot easier said than done so when I was approached by Elaine Gordon of www.EatingbyElaine.com, a healthy, allergy-friendly recipe blog, to post some of her allergy-friendly family recipes, I jumped at the chance to share with our community.
Just a little background info… the concept of her recipe blog, Eating by Elaine, comes from a lifetime of experimenting with recipes to make them healthier while conforming to specific dietary limitations due to food sensitivities and allergies. She grew up in a family full of various food allergies, struggled with food sensitivities herself and has a daughter with severe tree nut allergies, too. So, over the years she has learned to cook healthy, family-friendly meals that can accommodate everyone!
No-Bake Allergy Friendly Energy Bites
No-Bake Energy Bites are the perfect sweet and nutritious allergy-friendly snack for both adults and kids. They are loaded with whole grains, fiber and plant-based protein.
This recipe combines quinoa, oats and sunflower seed butter to create little bites of heaven that are incredibly satisfying and easy to make. Just stir, form into balls and freeze. Store in the freezer for a convenient pick-me-up that will also satisfy your sweet tooth. Everyone can enjoy these energy bites because they are nut-free, dairy-free, egg-free, gluten-free, soy-free, sesame-free, refined sugar-free and vegan.
Ingredients
- 1 cup cooked white quinoa (completely cooled or refrigerated)
- 1 cup quick cooking oats (gluten-free if desired)
- ¼ cup sunflower seed butter (refrigerated)
- ⅓ cup mini vegan chocolate chips
- ¼ cup maple syrup
- ½ teaspoon pure vanilla extract
- ¼ teaspoon cinnamon
- ¼ teaspoon sea salt
Instructions
- Line a small baking sheet with wax or parchment paper and set aside.
- Combine all ingredients in a medium-sized mixing bowl. Stir until well incorporated.
- Using your hands, roll the mixture into individual small balls. The recipe makes about 12 energy bites that are approximately 1.5 inches in diameter, but any size will do.
- Place the small balls onto the lined baking sheet and place in the freezer for 4 hours or overnight. Enjoy straight out of the freezer. You may want to wait a minute or two to let them thaw out a bit before enjoying. They can also be served at room temperature but do not hold their shape as well.
