Vegan, Gluten Free & Nut Free Soft-Baked Oatmeal Raisin Cookie Recipe

There’s nothing that says home quite like a chewy, warm, oatmeal raisin cookie. But, if your kiddo has food allergies, enjoying these tasty treats may be impossible–but not anymore! Eating by Elaine has graciously allowed us to share this vegan, gluten free and nut free soft-baked oatmeal raisin cookie recipe. Bake it at home and then come back and let us know what you (and your kids) thought!

INGREDIENTS:

• 2 flax eggs (2 tablespoons ground flaxseed + 6 tablespoons water)
• 3 cups old fashioned oats (gluten-free if desired)
• 1 teaspoon fine salt
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• ½ cup maple syrup
• ½ cup softened vegan butter (I use soy-free Earth Balance butter)
• ½ cup unsweetened apple sauce
• 2 teaspoons pure vanilla extract
• 1 cup raisins
